This was my lunch today. I just started eating quinoa and it is pretty good stuff. It has no flavor in particular so it takes on the flavor of whatever you season it with.
I sauted some onions and garlic in rosemary infused avacado oil and added chopped yellow squash and some diced tomatoes. Salt and pepper of course and some thyme from our Tower Garden out back. After the quinoa was cooked, I added this to the skillet to infuse it with the wonderful flavors and walla! Lunch today. Quinoa is an excellent source of protein making it ideal for us vegetarians.
