Sweet Super green salad includes: olives, balsamic tomatoes, kale, broccoli, brussels sprouts, pumpkin seeds, dried cranberries and a poppy seed dressing. A cute Spring inspired snack for my toddler… a ladybug made of a berry mix..yum! Found this cute lion face snack on Pintrest… peanut butter on toast, bananas, and mandarin oranges. I took a spin at baking. I made for the first time homemade banana peanut butter oatmeal cookies. I got the recipe off my Bakers Delight board on Pintrest. Yep, they tasted as scrumptious as they sounded. I also played around with ideas of homemade lunchables for the kids. These lentil and black rice patties are a winner for me, made with psyllium husk for added fiber, compliments to another fabulous creation of Chef Tai, an amazing vegetarian, vegan chef. And check out this chick pea and brown rice pilaf I made, recipe found on Pintrest off my Yummy board. This was my delicious lunch the other day. I made a complete vegetarian stir-fry. I noodled off a zucchini and replaced it with the rice. Use a spiralizer if you have one to turn the zucchini into noodles. If not, just peel it vertically using a vegetable peeler then cut it into thin strips. I sauted a red pepper, partially boiled green beans and broccoli, red onion, and a couple cloves of garlic, and shredded carrots in a pan with sesame oil. I then added a homemade soy sauce made by the chef of the house, which is a special blend of coconut aminos. Add the zucchini noodles at the end for about a minute or two. Season with salt, garlic powder, onion powder, and pepper. If you cook the noodles down too much they will kind of disintegrate into nothing.
