Sweet Super green salad includes: olives, balsamic tomatoes, kale, broccoli, brussels sprouts, pumpkin seeds, dried cranberries and a poppy seed dressing. This was my delicious lunch the other day. I made a complete vegetarian stir-fry. I noodled off a zucchini and replaced it with the rice. Use a spiralizer if you have one to turn the zucchini into noodles. If not, just peel it vertically using a vegetable peeler then cut it into thin strips. I sauted a red pepper, partially boiled green beans and broccoli, red onion, and a couple cloves of garlic, and shredded carrots in a pan with sesame oil. I then added a homemade soy sauce made by the chef of the house, which is a special blend of coconut aminos. Add the zucchini noodles at the end for about a minute or two. Season with salt, garlic powder, onion powder, and pepper. If you cook the noodles down too much they will kind of disintegrate into nothing.

I crave a lot of hearty food during Fall like pot pies and stews. So the other day I made a hearty vegetable soup for lunch. The kids have been sick lately as well deeming it a perfect time for soup. I diced half a white onion and about 5 cloves of garlic. I sauted them in the pot for a minute or two with a little bit of olive oil. I then added a whole quart of vegetable stock before adding my vegetables. You can really use what you have on hand. This time I threw in some diced carrots and celery, green beans, peas, and cauliflower. I have even added yellow squash and broccoli to it before. I am a vegetarian so I like my vegetables. I seasoned it with salt, a little bit of pepper, some garlic powder, and onion powder. I let it boil on medium high for about 15 minutes. This is a really simple recipe and a good one to bring out on your sick days.

This was my lunch the other day compliments of Chef Tai. It was a super green juice. We juiced collard greens, spinach, lemon, apples, garlic, celery, cucumber and cilantro together in our juicer. Garlic is good for your heart. Cilantro is good to detox your lungs and respiratory system. Collard greens, celery, and spinach is plant based protein. And we all know how beneficial lemons and apples are to our health. If you are detoxing or have a sugar imbalance, green apples are preferable.
